25th October is celebrated as World Pasta Day which calls for striking flavors of Italy. We’ve put together a few classic Italian recipes which can take less than 15 mins.
The choice of pasta may vary from a classic spaghetti to tagliatelle, fusilli, farfalle or the most loved penne. The style of cooking a pasta may also vary from al dente. Pasta boils down to two main classifications for pasta lovers
- Pasta fresca ( Fresh )
- Pasta secca ( Dried )

AGLIO E OGLIO ( Pasta with olive oil and garlic )
While cooking the pasta, place the olive oil and garlic in a pan over medium heat. Stir until the garlic turns golden. Then, follow the above steps to add the pasta, season with salt and pepper, and emulsify the sauce. Toss through parsley and chilli flakes, and serve with parmesan cheese.
Things you need:
½ cup olive oil
10 garlic cloves, sliced
1 tbsp chilli flakes
¼ cup chopped parsley
POMAROLA ( Pasta with fresh tomato and basil sauce )
While the pasta is cooking, pour some olive oil and garlic in a pan over medium heat. Stir until the garlic is fragrant, add tomato and cook briefly, just to warm through. Then follow the above steps to add the pasta, season with salt and pepper, and emulsify the sauce. Toss through basil, serve with parmesan cheese.
Things you need:
4 tbsp extra virgin olive oil
2 garlic cloves, crushed
24oz/800g fresh cherry tomatoes, halved
¼ cup fresh basil, lightly packed
ARRABBITA ( Fiery Pasta )
While the pasta is cooking, place the olive oil and garlic in a pan over medium heat. Stir until the garlic is fragrant, add tinned tomatoes, chilli flakes and cook briefly, just to warm through. Then follow the above steps to add the pasta, season with salt and pepper, and emulsify the sauce. Toss through basil, serve with parmesan cheese.

2 garlic cloves, crushed
21oz / 600g crushed tinned tomatoes
2 tbsp chilli flakes
¼ cup chopped parsley
SPAGHETTI NEPOLITANA ( Tomato Spaghetti )
While the pasta is cooking, place the olive oil and garlic in a pan over medium heat. Stir until the garlic is fragrant, add tinned tomatoes, chilli flakes and cook briefly, just to warm through. Then follow the above steps to add the pasta, season with salt and pepper, and emulsify the sauce. Toss through basil, serve with parmesan cheese.

3 garlic cloves, crushed
1 brown onion, diced
28oz / 800g crushed tinned tomatoes
¼ cup fresh basil, lightly packed
SPAGHETTI AL TONNO ( Pasta with Tuna )
While the pasta is cooking, place the olive oil and garlic in a pan over medium heat. Stir until the onion and cook until softened, then add tinned tomatoes, chilli flakes and bring to a rapid simmer, then add the tuna. Then follow the above steps to add the pasta, season with salt and pepper, and emulsify the sauce. Toss through parsley and serve.

¼ cup extra virgin olive oil
2 garlic cloves, crushed
½ brown onion, diced
14oz / 400g crushed tinned tomatoes 50oz/ 150g tinned tuna
¼ cup chopped parsley
SPAGHETTI CON LE ACCIUGHE ( Pasta with Anchovies )
While the pasta is cooking, place the olive oil, garlic and anchovies in a pan over medium heat. Stir until the garlic is fragrant and the anchovies have melted. Then follow the above steps to add the pasta, season with salt and pepper, and emulsify the sauce. Toss through parsley and chilli flakes and serve with parmesan.

⅓ cup virgin olive oil
2 garlic cloves, crushed
2 tbsp anchovies, finely chopped
1 tbsp red chilli flakes
¼ cup chopped parsley
